Energy Bites

Those of you who have visited my studio for treatments may have had these at some point.

They are so easy to make and are a great little afternoon snack especially if you get a 3pm sugar craving. 

The protein and good fats from the nuts balance blood sugar and help to make you feel full, one or two will give you a boost of energy and see you through that afternoon slump.

 

Ingredients

2/3 cup dates
1/3 cup unsulphured apricots
1/2 cup pecans
1/2 cup cashews
1/3 cup unsweetened coconut flakes
1 tbsp raw cacao powder
1 tbsp water
1 tsp coconut oil
pinch of salt
2 tbsp hemp protein powder (optional)

 

Soak the dates, apricots and cashews in water for 1 hour. Then drain and add to a blender with the rest of the ingredients. Blend until the ingredients are well combined and a dough is formed. Another tablespoon or two of water can be added if the mixture is too dry. Roll tablespoon sized amounts of dough into balls with your hands. Put them on a large plate or baking pan and refrigerate for 30 minutes.

You can be creative! Use different nuts, add in whole seeds, chopped nuts or dried fruit at the end, to create different textures. Flavour with cinnamon, nutmeg, vanilla, orange or lemon zest.

You can also roll finished balls in coconut, ground nuts (pistachos look pretty), cacoa powder, sesame seeds before chilling.
